Good, Quick, Yummy Gluten Free Lunch, Product Review; Amy’s Enchilada’s

I haven’t been eating out as much lately because I have been working from home. I have been searching for good, gluten free lunch options, that don’t require me to really “cook” much. This time I had Amy’s Enchilada with Spanish beans and rice. The box says “No Gluten Ingredients” and I think that is because there was a stink about the company packaging gluten free and non-gluten-free meals in the same facility. I generally don’t worry about that (unless I get sick and then I avoid that product/company). That is my personal preference, and I encourage you to be as safe and careful as you feel comfortable with! 

Anyway, this was a good lunch. I just nuked it for 5 minutes (as directed). Pretty good! I am happy to see more “mainstream” gluten free foods, like frozen meals.

    YUM! I love these too! I eat a lot of Amy’s gluten free meals — their microwave mac and cheese and mexican casserole bowl are tasty too. Love your posts about gluten free foods – it’s great to hear what others think (some gf foods can be really nasty!). 🙂
